I don’t know if you have lived your wildest dreams, but I have. My sister and I had our dream to own a bakery of our own, just last year. When we were barely able to walk, our mom would put us up on the counter when she was baking and cooking. She would show us the things she put into her recipes and tell us why they were there. She would let us taste different spices when we were older and ask us what we thought should go together? We were pretty lucky to have a mom who could instill such a passion into her children. From the time we knew who we were, we knew what we wanted to do. We would play baker and serve cupcakes to our family and friends. Then ten years ago, mom and dad sent us to culinary school after graduation. We learned different techniques that would compliment our already natural ability for baking. We learned how to ‘fancify’ the good stuff, as our dad said. After school, we bought a small building and started our own bakery. There were a lot of things to do before we could actually open. There was plenty of space for the ovens and stoves. There was a walk-in refrigerator as big as our bedroom and a walk-in freezer. The thing missing was a HVAC system. We called the HVAC company and asked them about a commercial HVAC system for our bakery. We needed good ventilation, heating, and air conditioning. The HVAC technician they assigned to us, was at the building the following day. He knew exactly what we needed once he inspected the building. We were finally on our way to being professional bakers.
